Afritada is a Filipino chicken stew consisting of chicken and vegetables braised in a tomato sauce.

To cooked this pork and liver afritada, In a cooking pan,fry carrot and potatoes in 3 minutes. Set aside.Sauté garlic and onion. Add pork, pork liver and spice with salt, and continue sautening until meat renders fat and changes in color.Add carrot, potatoes, green peas and bay leaves. Simmer for 5 minutes. Add oyster sauce and tomato sauce. Simmer for 5 minutes. Add water and continue cooking until a saucy consistency is achieved. Add and stir well with flour to thicken the sauce. Season with salt and pepper according to taste.

Pork and Liver Afritada Recipe

Ingredients:

  • 1/2 kilo pork belly
  • 200 grams pork liver ; cut into desired pieces
  • 2 potatoes; slice i1 inch thick
  • 1 carrot; sliced in 1 inch thick
  • Garlic minced
  • Onion; chopped
  • 1 can tomato sauce
  • 1 tbsp oyster sauce
  • 1/2 cup green peas
  • Salt and pepper
  • 1/2 cup water
  • 1 tablespoon flour
  • 2 bay leaves
  • Cooking oil

Cooking Instructions:

  1. In a cooking pan,fry carrot and potatoes in 3 minutes. Set aside.
  2. Sauté garlic and onion.
  3. Add pork, pork liver and spice with salt, and continue sautening until meat renders fat and changes in color.Add carrot, potatoes, green peas and bay leaves. Simmer for 5 minutes.
  4. Add oyster sauce and tomato sauce. Simmer for 5 minutes.
  5. Add water and continue cooking until a saucy consistency is achieved.
  6. Add and stir well with flour to thicken the sauce. Season with salt and pepper according to taste.
  7. Serve hot!
